The website says 1 wall tent per site. Does this mean we can have more than 1 spike tents? It's my first time car camping so I'm not sure.

Yes, just buy a pass for your tents. My site usually has at least 4 tents every year

I would call the contact info on the website to confirm your questions... I've seen plenty of pop up shade covers as a community tent amongst a group of campers along with small spike tents next to their cars but I don't recall a wall tent... You may want to check with the organizers..better to be sure than sorry...
I do know they are pretty firm on individual camping site sizes... Usually....

Maybe for Car Camping they are strict but the higher you get up the bigger the sites get. We usually camp in the woods and in 5 years no one has ever mentioned anything about Camp Size to me

One of my favorite arguments. We always had problems on Thursday and Friday trying to park our companion vehicle behind the RV despite the fact that our RV, SUV, two EZups, and cornhole set fit inside the space we purchased. As others parked their other vehicle we moved our in without issue.
I'm thinking the issue is many taller wall tents could block the sight lines for cars pulling out and in. I would just keep that in mind as you set up and bring along a tape measure.
